Xavier Pellicer is the latest personal project and new home to chef Xavier Pellicer, whose restaurant he names after.

 

Pellicer bases his concept on healthy eating. A concept that seeks balance from the moment of ingestion to the well-being of digestion. This is achieved by diligently following the organic approach of biodynamic agriculture that deals with sourcing ingredients and wines to form a menu that is entirely ecologic and local.

 

In keeping in harmony with this philosophy, Pellicer incorporates the element of fire to his kitchen with his Mibrasa GMB100 Parrilla open grill. Embers, smoke, ash and flames, characteristics unique to cooking with open fire and vital for Pellicer to achieve his goal: “simplicity is my authenticity”.

 

Within just a few days of opening his new site, the green restaurant guide We’re Smart Green Guide awarded Pellicer with the best vegetable restaurant in the world 2018. The front-runner for a promising and greener future.
