The young and renowned chef Paco Morales takes on the challenge of blending haute cuisine and casual dining at the restaurant "Al Trapo" in Hotel Iberostar Las Letras on Gran Via, Madrid.


Besides his work as a consultant and chef in this and other restaurants, Paco Morales runs his own restaurant the Hotel Ferrero (Valencia) and has also just recently inaugurated Noor restaurant in his hometown of Cordoba, where he restores the Arab heritage and north African with Andalusian cuisine while applying knowledge of the utmost modern kitchen.


Al Trapo restaurant offers a cuisine rooted in tradition, with modern touches, which defines a structured letter "sensations", from which each diner can create their menu outside the classic pattern of starter-main dish-dessert, allowing customers to qualify it and customize it.


The head chef Rafael Cordón cooks with the HMB 75 Mibrasa oven, preparing a succulent cuisine, very fresh, very transnational, from here and from there, which gathers the identity of cuisines from different countries, breaking free from the conventional as far as customer service, care and relations are concerned.
