MIBRASA® - Charcoal Oven, Parrilla, Robatayaki and Hibachi

Christian Martín

9Nine.
HMB SB 75 Mibrasa Charcoal Oven

Owner and head chef Christian Martín Roldán tells us how he came about 9Nine with such feeling and passion that we are immediately captivated. Purity and quality are perhaps the words that would describe this restaurant on Carrer de Valencia in Barcelona’s Eixample neighborhood.

Roldán speaks about the revered chefs who he has admired and who have inspired him over the years, however, what he really wanted was to create a restaurant where you could go to every day, and not just for special occasions. At 9Nine every detail deserves consideration; from the size of the tables, music, lighting, quality service to ensuring the atmosphere feels casual and cosy. But where the most attention lies is in the quality of the ingredients, the key being to keep manipulation down to a minimum.

The open kitchen may be tucked away in the back but it exposes itself so guests can watch and dine from their seats. Prime cuts of meat, fish and seafood grilled in the Mibrasa oven with such soul and dedication, it’s no wonder guests want to visit this restaurant time and time again.
