Fireside offers some of the world’s most exquisite cuts of beef, selected for their exceptional flavor and texture, and grilled to perfection under the supervision of Chef Jaime Ortolá. These include the prized Australian Blackmore Wagyu, known for its rich marbling and buttery texture; an exclusive Irish beef, grass-fed and salt-aged dry; Italian Scottona beef aged 15-24 months, with a milky and tender texture; and a 9-year-old Spanish Rubia Gallega, with a complex flavor.
Our carefully curated menus also feature dishes with the finest lamb, pork, poultry, seafood, and vegetables from sustainable sources around the world.
