At this year’s Deli XL for Food yard fair, our very own MIBRASA corporate chef, Johan De Clercq gave a demonstration in front on 30 chefs on using our Mibrasa oven.
The presentation began with vegetables grilled in the MIBRASA, followed by shellfish and fish. To finish up the demo, he cooked up different cuts of meat for the observing chefs to taste.
So fond of smoking food, Chef Johan demonstrated his specialty technique by adding grapevines to the charcoal fire. With this he showed the chefs how to make smoke-oil and later cooked smoked salmon to give it a distinctive smokey flavour.
